This recipe is sweet, delicious and fresh! I love it because it tastes just like apple pie but is completely appropriate for breakfast.
You can make the apple compote ahead of time and store in the refrigerator so all you have to do throughout the week is warm it up.
I use quick oats but you can use steel-cut or regular oats is you prefer. I hope you enjoy it!
2 Cups Oats
3 1/2 Cups Whole Milk or Almond Milk
*Bring the milk to a boil add in oats and simmer on low constantly stirring until the oats are cooked and become thick. This takes about 7-10 minutes.
4 Apples cored and diced
2Tbs Unsalted Butter
1/4 tsp Nutmeg
1/2 tsp Cinnamon
1/4 Cup Maple Syrup
Zest of 1 Lemon
Juice of 1/2 Lemon
* Melt butter in a skillet on med high. Add in apples and spices and saute for two minutes. Next, add in the maple syrup, lemon juice and zest. Stir together and simmer on low for 5 minutes until the apples soften.
** I like to serve the oatmeal by placing a tablespoon of sweetened condensed milk at the bottom of the bowl and adding a heaping scoop of the oatmeal topped off with the apple compote! DELICIOUS
