Christmas Morning Fig Jam Sticky Buns

Move over cinnamon buns this Christmas morning I’m serving up my delicious Fig jam sticky buns! Super quick and easy to make. The perfect make-ahead breakfast to serve to your loved ones this holiday. Served up with my equally simple mini frittatas and your meal is complete! Fig Jam Sticky Buns

One loaf frozen bread dough, unthawed.

2 tablespoons butter, melted

1/4 cup brown sugar plus two tablespoons.

1/2 tablespoon cinnamon

2 tablespoons honey

1 cup fig jam (Look for good quality jam)

1/2 cup walnuts, chopped.

Egg wash:

1 egg

1 tablespoon water


1 cup powdered sugar

1/4 cup brown sugar

1/2 teaspoon vanilla

2 tablespoon milk

Allow bread to thaw the night before. Bring it to room temp before using.

Pre-heat the oven to 350 degrees.

Lightly grease a square cake pan with butter or cooking spray. Sprinkle two tablespoons of brown sugar along the bottom of the pan.

Roll bread dough into a large rectangle and brush with melted butter.

Mix fig jam, walnuts, cinnamon, and honey in a bowl; spread evenly over dough leaving 1/2 inch clear. Roll dough lengthwise into a log. Moisten edge with egg wash and seal the edge. Cut into 8-10 slices and arrange in pan.

Bake in preheated oven until golden brown about 25-30 minutes.

Meanwhile mix confectioners’ sugar, brown sugar, milk, and vanilla in a bowl until smooth. Drizzle over sticky buns and serve warm!

Mini Fritattas

Ten large eggs
1/4 cup whole milk
1/4 cup heavy cream
2 tablespoons grated parmesan

salt and pepper to taste
1 cup thinly sliced ham, chopped
1 cup cooked crumbled bacon
1 cup cooked crumbled breakfast sausage
1 cup finely grated cheese (your choice)
1 cup cooked asparagus tips
1 cup diced red bell pepper
1 cup chopped spinach
Fresh chopped parsley
Fresh chopped basil

Preheat the oven to 350 degrees.

Whisk cream, milk, parmesan, salt, and pepper in a large bowl and set aside. Place crumbled bacon, sausage, sliced ham, cheese, herbs, and vegetables in small containers. Spray mini muffin tins with non-stick spray and place on the counter.

Pour your egg mixture into prepared muffin tin. And let your family place their favorite toppings.

Bake in the oven until mixture is set and lightly browned. About 8 to 10 minutes.

Once lightly cooled pop out of your muffin tins and serve alongside your sticky buns.

Fig Glazed Flounder With Mango Salsa

Two whole flounders, cleaned and deboned.
Salt and pepper to taste.
1/2 tablespoon garlic powder
1/2 tablespoon dried tarragon
1/2 tablespoon dried dill weed
1 cup cornmeal
1/2 cup fig jam, at room temperature.
One tablespoon lemon juice
Lemon wedges, for serving

Preheat oven to 450 degrees.

In a large dish add spices and cornmeal. Combine well.

Add milk to another bowl.

Dip fish carefully into milk and then lightly coat with cornmeal mixture.

Place on a foil covered baking sheet.

Mix fig jam and lemon juice and drizzle over the top of each fish.
Bake for 12-13 minutes until flaky.

I top with my mango topping and lemon wedges. Served with my crispy Persian rice.

Mango Topping:

One mango, peeled and chopped
One tablespoon jalapeno
1/4 cup diced onion (red or white)
Two tablespoons lime juice
salt and pepper to taste.

Chill in refrigerator while preparing fish.
