Pineapple Upside Down Cornbread

Hey guys! I’m really excited to share my latest recipe featuring Fleischmann’s Simply Homemade Cornbread Mix – Pineapple Upside Down Cornbread. It’s a sweet, simple treat perfect for the whole family to enjoy.

By the time spring rolls around, I am ready for a Caribbean vacation! Unfortunately, as a busy mom of two, I don’t always have time for an island escape, so I try to mix tropical flavors into my cooking – and that’s how I came up with my Pineapple Upside Down Cornbread!

This recipe delivers scratch-made taste and takes almost no time at all using Fleischmann’s Simply Homemade Cornbread Mix. It’s made with the same real simple ingredients you would find in your pantry, and contains no artificial flavors, colors or preservatives, so I feel good about sharing it with my friends and family.

I love this dish because it can be used for every occasion! This light, fresh dessert is perfect for Easter spreads. I also like pairing this cornbread recipe with the Jamaican Curry Chicken recipe found in my book, The Seasoned Life. The sweetness from the pineapple and the delicious flavor of the cornbread work to balance out the heat from the curry. Give it a try if you’re craving a quick culinary tropical getaway!

Recipe
Ingredients:
· 1 box Simply Homemade cornbread mix
· 2/3 cup milk
· 1/3 cup of butter or margarine, melted
· 1 egg
· 1/4 cup reserved pineapple juice
· 15 oz can of pineapple rings
· Jar of maraschino cherries- pitted
· 2 tablespoons butter
· 1/2 cup brown sugar

Preheat oven to 375 degrees.

Follow the instructions on the back of the box. Also, mix in reserved pineapple juice.

Set aside bowl.

Heat a cast iron skillet over medium-high heat.

Add in 2 tablespoons of butter and cook until melted. Remove from heat. Sprinkle brown sugar evenly around the pan. Spread the pineapple around the pan before placing a cherry in the center of each.

Gently pour the cornbread mix over the mixture. Make sure to smooth it out over the whole bottom of the pan.

Place the cast iron skillet into the oven for 30-35 minutes. Or until lightly browned

Once done remove from the oven and allow to cool.

Celebrate on a budget!

I love to entertain. But my favorite people to entertain are my KIDS! Which is why I am so in love with the dollar section at Target. I’m able to get a bunch of cute and inexpensive items to make my kid’s faces light up. You can even create an adorable Valentine’s inspired breakfast for dinner, using inexpensive heart-shaped cookie cutters in various sizes and milk jugs.

Heart Shaped French Toast and Eggs

3 Eggs.
3/4 Cup of milk or heavy cream.
1 Teaspoon cinnamon.
1 Teaspoon pure vanilla extract.
1 Teaspoon granulated sugar.
Pinch salt.
Any type of bread. (3-4 slices)

*Tip* Mix together 2 tablespoons of sugar and 1 tablespoon of cinnamon in a separate bowl and sprinkle on each side as cooking.

Beat eggs, vanilla, and cinnamon in shallow dish. Stir in milk.

Use heart shaped cookie cutter to make your shapes.

Dip bread in egg mixture, turning to coat both sides evenly. (Don’t be the victim of soggy bread!)

Cook bread slices on greased nonstick griddle or skillet over medium heat until browned on both sides. (Butter baby!)

For the eggs. I simply sprayed a heart shaped cookie cutter with non-stick cooking spray. Put it in a heated skillet and crack an egg inside of each one. Cook it to your liking! And season with salt and pepper.

*Tip* Placing a pan lid over the top ensures fully cooking your egg. Usually about 2-3 minutes.

Romance With Butter

Valentine’s day is swiftly approaching so I wanted to share a few ideas to impress your loved ones. Butter! Who doesn’t love it? It adds nutty delicious flavor to almost any dish. And contains healthy fats such as omega-3 fatty acids. While also being rich in vitamins like A, D, E, and B-12. Not saying by any means that butter is healthy for you. But everything in moderation is fine. And if I had to splurge on a guilty pleasure this Valentine’s day it would be on a really delicious compound butter. Sliced and added to the top of a sizzling steak! Perfection. And a sure way to impress your loved one. Give it a try and mix it up with your favorite ingredients. You really can’t go wrong. The perfect accompaniment to go with my “Pan Steak” recipe from my book “The Seasoned Life“. Be sure to get a copy this Valentine’s day to create some super simple and delicious recipes at home!

Compound Butter- 3 Ways

Garlic Herb Butter
1 Stick unsalted butter, at room temperature.
1 Tablespoon rosemary, finely chopped.
1 Teaspoon thyme, finely chopped.
2 cloves garlic, finely minced. (Microplane works great.)
Glad plastic wrap.

Smoky Butter
1 Stick unsalted butter, at room temperature.
1 Tablespoon smoked paprika.
1 Tablespoon flat leaf parsley, finely chopped. (Any Type.)
Pinch salt and pepper.
1 teaspoon thyme, finely chopped.
2 cloves garlic, finely minced.
Glad plastic wrap.

Blue Cheese Butter
1 Stick unsalted butter, at room temperature.
1/2 cup crumbled blue cheese.
1 Tablespoon thyme, finely chopped.
Pinch salt and pepper.
Glad plastic wrap.

In a large bowl, combine butter, and all ingredients for each recipe. Use a spatula to combine all of the ingredients well. Scoop the mixture onto a sheet of Glad plastic wrap. Roll into a log and twist the ends shut. Place in the refrigerator for 2 hours, or until the butter is firm. You can serve melted on top of your steak or serve it unmelted and just let them see the magic happen!

*Quick tip*
These can also be used for a quick and flavorful chicken dish! Just carefully lift up the skin on the breast of your chicken and place slices of compound butter between the meat and the skin. Bake in preheated oven (375) until chicken meat is no longer pink at the bone and the juices run clear 45 to 60 minutes.

Your leftovers can be wrapped in Glad freezer wrap and saved for another dish. Hope that everyone enjoys making these!

Baked Tilapia In Foil

  

Easily put together with an even easier clean-up. This is something your kids can help you make! And it can be changed in a flash by substituting different types of fish and veggie combinations. Tilapia is full of omega-3 fatty acids and protein. I pair it along with some delicious vegetables like kale and sunburst tomatoes. This would be a perfect meal to go with the ZÜPA NOMA “Superfood Souping” plan! It’s the perfect way to boost your metabolism and detoxify.

Baked Tilapia In Foil

4 Tilapia fillets
Fresh kale or spinach
Fresh minced garlic (about 1 clove per fish)
4 Teaspoons olive oil (1 teaspoon for each tilapia)
Fresh lemons (optional)
Salt, pepper, smoked paprika and/or your favorite seasonings. Mix together in a separate bowl. Sprinkle combined seasoning over each filet. (about 1 teaspoon for each piece of tilapia depending on size)

Preheat the oven to 375 degrees F.

Lay each fillet out on its own piece of foil. Make sure that the foil is large is enough to fold the fish and veggies when assembled.
Season each piece of fish with salt, pepper, and smoked paprika.
Combine all of your veggies in a bowl and season with salt and pepper. Top each fillet with the mixture.
Drizzle each pouch lightly with olive oil.

Fold over the fillet and roll up the edges to create a seal. Place on a baking sheet and bake for 15 to 20 minutes. Once your fish is cooked it will flake easily with a fork.

I love to give it a squeeze of lemon for some acidity at the end.

Now, these can be served straight from the packet for easy clean-up. Or you can remove it from the foil and plate it with the veggies on top. Enjoy!

Lunch In A Jar!

Who has the time to stop and make lunch these days! We end up making bad food choices that are convenient, and not always the best choice for our body. With a little prep, you can whip up an entire week’s worth of lunches, all at once. Filled with delicious items that help to keep your energy up and hunger at bay. Here are two variations of “lunch in a jar” that I came up with. You can create hundreds of different combinations using ingredients that you probably already have in your pantry. Lunch In A Jar #1

2-3 Cilantro lime salad dressing (Or your favorite)
6 Evenly cubed fresh jicama sticks
2 Small Persian cucumbers, sliced.
1/2 Cup corn kernels (canned is fine)
1/2 Cup black beans
2 Cup spring salad mix
1/4 Cup Cojita cheese
1/2 Diced jalapeno, without seeds. (optional)
4-6 Cooked shrimp. (depending on size)

Pour your salad dressing at the bottom of the jar. Then add jicama, corn, beans, cucumber, lettuce, cheese, and protein. In that order. The crunchy items help to keep the salad from becoming soggy.

Lunch In A Jar #2

2-3 Tablespoons fig balsamic salad dressing (Or your favorite)
1 Cup of chickpeas
1/2 Cup sliced sunburst tomatoes.
2 Small Persian cucumbers, sliced.
2 Cup spring salad mix
1/4 Cup feta cheese
1/2 Cup tuna fish or salmon. (canned is fine)

And now you’ve got the perfect jar of salad happiness!

1/2 Cup Coconut water (You can substitute as needed)
1/2 Cup mango
1/2 Cup plain greek yogurt
2 Tablespoons ground flax seed
1 Tablespoon agave (optional)

1 Cup almond milk (or nut milk of your choice)
1 Cup mango chunks
1 Peeled and sliced blood orange
4 Small pitted dates
2 Tablespoon lemon juice (approx juice of 1 lemon)
Pinch sea salt
1/2-1 cup ice (depending on desired consistency)

Simply place ingredients into blender and blend. If the consistency is too thick for you simply add more ice and continue to blend to your liking! So easy and so delicious.

“Super Green Smoothie”

1 Whole cucumber

1 Cored apple
2 Tablespoons ground flax seed
2 Teaspoons Lime juice
1 cup Fresh broccoli
Fresh ginger (To your taste)
1/2 cup Spinach

Cheers to 2017! (Boost Your Water)

The new year is in full effect! 2017 is all about bettering ourselves. Staying true to yourself and your values, but constantly evolving to become the best version of YOU possible. I think it’s important to remember this as the days go by. We are all different! No one person is like the other and that is simply a beautiful thing. I believe as human beings it’s important for us to blaze our own paths set our own goals all while supporting each other along the way. Everyone can win, everyone can thrive and we can do so while lifting each other up and being a support system for one another.

I feel the best way to go about supporting each other in an easy way is by sharing tips and tricks we find along the way. That being said I am here to share a couple of ways to “boost your water!” One of my resolutions this year is to simply drink more water. Water is vital to our health. It sets the foundation for anything “health and fitness” and I feel like it is constantly my down fall when it comes to trying to live a healthier lifestyle. Over the past couple of months I’ve stumbled across a couple of ways to make drinking my water a bit more fun. Not only is it fun but the couple of tips I’ve found also make the water more beneficial to our bodies than simply hydrating it! My husband is now hooked on them as well! Okay, so here goes nothing. DRINK UP!!

1. CHLOROPHYLL

This is the method I’ve been using the longest!

This algae based pigment comes in drop form. I simply place about 15 drops into my water and drink! The green color is quite intimidating but the benefits are unmatched. Chlorophyll is great for for cleansing your system, curbing your appetite, its a super antioxidant and get this… Reduces body odors. WIN,WIN,WIN. The drops I purchase are from Whole Foods. Since taking chlorophyll I have found myself to have less fatigue and no crash mid day. Try it and let me know what you think.

2. OREGANO OIL 

Oregano oil is just that, oil produced from oregano. It offers a ton of benefits from natural cold remedy to weight loss supplement. It also contains Vitamins C and E, Magnesium and Zinc. If that’s not enough to make you want to try it… It also aids in digestion. You can take this oil directly in a capsule or place a few drops in water.

 3. INFUSE– HERBS, CITRUS, FRUIT & VEGGIES

This is the easiest and most delicious way to develop a higher water intake. Simply take your favorite citrus, herbs, fruits or veggies and INFUSE your water! These days they even make special water containers that are specifically made to aid in infusing water. Like the one found HERE. This gives you the opportunity and freedom to play around with flavor combinations all while keeping your health integrity.

My favorite combination is lemon, cucumber and mint! The lemon acts as a natural detox while the mint and cucumber add freshness!
