Quick And Easy Homemade Croutons. The end of summer is nearing and what better way to finish it out than with a flavorful salad straight from the garden. My Panzanella salad with a dijon vinaigrette is fantastic. It’s tangy and sweet with lots of crunchy vegetables and of course Croutons! You can use them in your next soup or salad recipe and create something magical. Just chop, cube and brown in the oven, and about fifteen minutes later you’ll have golden chewy and crispy croutons! Quick And Easy Homemade Croutons

1/2 cup extra virgin olive oil
One long baguette, cut into 1-inch cubes (about 6 cups)
One teaspoon salt
1/4 teaspoon garlic powder, optional

Preheat oven to 375 degrees.

In a large bowl add bread cubes, salt, and garlic powder. Drizzle with olive oil over the bread and combine well until coated and the bread absorbs olive oil.

Spread cubes of bread onto a baking sheet. Drizzle with olive oil. Bake in a preheated oven for 15-20 minutes until golden all around. Remove from oven and allow to cool.

I absolutely love the simplicity of taking something so simple and elevating it! And whats easier than creating an aromatic and delicious rosemary butter to take your grilled cheese to the next level. This grilled cheese is loaded with swiss, mozzarella, and sharp cheddar cheese. I also add a smear of dijon to fresh slices of bread for some punch and finished off cooked with rich rosemary butter. So If you love cheese as much as me, then you will love this quick take on a classic. I mean there is nothing more satisfying and comforting than a crunchy, gooey, melty grilled cheese!

Grilled Cheese With Rosemary Butter

Grilled Cheese With Rosemary Butter

Four slices your favorite bread (I used some freshly cut Italian bread)
Mozzarella cheese, thinly sliced.
Sharp cheddar cheese, thinly sliced.
Swiss cheese, thinly sliced.
Dijon mustard. (About 1/2 tablespoon per sandwich.)
One sprig fresh rosemary
2 Tbsp butter, divided.

Add 1 Tbsp butter and to a skillet and heat over medium-low heat and add fresh rosemary to the hot skillet. Saute and stir often until fragrant and butter has started to lightly brown. You can either remove the rosemary from the pan or just move it to the side.

Spread one side of bread with a little bit of dijon.

Add both pieces of bread, dijon side up to your skillet. Top of each piece of bread with all three cheese slices and remaining bread. Once it starts to melt and brown flip over add remaining butter to a pan and cook the other side. About 2-3 minutes per side. You want that beautiful golden brown color.

Slice and enjoy!

Avocado Toast!

I recently picked up a copy of Gwyneth Paltrow’s  new book “It’s All Good”. It features awesome healthy recipes and little tips to help you organize your pantry and refrigerator. I fell in love with the “recipe” for avocado toast. It’s super easy, super healthy and super delicious. WIN WIN WIN!!!

Ingredients 

A slice of your favorite bread

half of an organic ripe avocado

1 tbs Vegenaise (vegetarian mayonaise alternative. it’s just better for you overall)

sprinkle of Vege-Sal (see photos)

sprinkle of pepper

Directions 

Toast your bread. Spread the Vegenaise on the bread and place your sliced avocado on top. Sprinkle with the Vege-sal and black pepper. Devour the deliciousness that you just created.

It sounds so simple and boring, but it is truly satisfying and yummy. I hope you like it!
