Chicken And Mushrooms With A Creamy Tomato Sauce. Hey everyone! I’m excited to end the week by sharing this delicious recipe. This dish is packed with flavor but cooks in no time. I love to use chicken thighs in my recipes as they are super juicy and flavorful. Not to mention inexpensive. The sauce is full of mushrooms, tomatoes, herbs, heavy cream, and cheese. And I love mushrooms. Not only are they in season all year long. But they are incredibly flavorful and have this meaty texture that makes them perfect for dishes like this — rounded out with a little heavy cream, cream cheese, and parmesan that turn this dish into something fantastic! Chicken And Mushrooms With A Creamy Tomato Sauce

Six chicken thighs, boneless-skinless.
One cup chicken stock
1 tablespoon olive oil
1 tablespoon butter
One clove garlic, minced
1 teaspoon dried thyme
1 tablespoon cumin
1 tablespoon smoked paprika
1 tablespoon fresh basil, roughly chopped.
1 tablespoon parsley, roughly chopped. (optional)
1 cup mushrooms, cleaned and sliced.
1 cup canned diced tomatoes, drained. (I used tomatoes that mixed with green chiles for some heat!)
1/2 cup heavy cream
2 oz. cream cheese
3/4 cup grated parmesan cheese. (Plus more for topping.)
salt and pepper to taste.

Heat a large skillet over medium heat, and add in olive oil and butter. Season chicken thighs with salt and pepper to taste. Add chicken to the pan. Cook on both sides for about 5-6 minutes per side or until browned and cooked through. Transfer to a large plate or platter.

Into the hot pan add garlic, shallot, and mushroom. Cook for 2-3 minutes. Add in tomato, stock, cream, chopped parsley and both kinds of cheese to the pan. Season with thyme, cumin, paprika, and salt and pepper to taste. Combine well and bring to a boil. Stir until it begins to thicken into a creamy sauce. About 5-6 minutes. Add chicken back into pan and coat well. Sprinkle with remaining cheese and fresh basil. Serve hot on its own or with your favorite pasta!

The new year is in full effect! 2017 is all about bettering ourselves. Staying true to yourself and your values, but constantly evolving to become the best version of YOU possible. I think it’s important to remember this as the days go by. We are all different! No one person is like the other and that is simply a beautiful thing. I feel the best way to go about supporting each other in an easy way is by sharing tips and tricks we find along the way. That being said I am here to share a couple of ways to “boost your water!” One of my resolutions this year is to simply drink more water. Water is vital to our health. It sets the foundation for anything “health and fitness” and I feel like it is constantly my down fall when it comes to trying to live a healthier lifestyle. Over the past couple of months I’ve stumbled across a couple of ways to make drinking my water a bit more fun. Not only is it fun but the couple of tips I’ve found also make the water more beneficial to our bodies than simply hydrating it! My husband is now hooked on them as well! Okay, so here goes nothing. This is the method I’ve been using the longest!

This algae based pigment comes in drop form. I simply place about 15 drops into my water and drink! The green color is quite intimidating but the benefits are unmatched. This is the easiest and most delicious way to develop a higher water intake. Simply take your favorite citrus, herbs, fruits or veggies and INFUSE your water! This gives you the opportunity and freedom to play around with flavor combinations all while keeping your health integrity.

My favorite combination is lemon, cucumber and mint! The lemon acts as a natural detox while the mint and cucumber add freshness!

Riley’s 1st time at the beach (VIDEO)

We got to spend the entire week with our family at the beach. It has become a tradition in our family to spend some time at our favorite beach when summer hits. It was a bit gloomy this time around but we found little peak a boos of sunshine here and there. I wanted to share this video my little brother made of Riley in the ocean and on the sand for the first time. This is also the first official video post I am doing here on the blog. I hope you enjoy! The Calm …

The next couple of days/weeks are going to be a whirlwind for my little family. “Dada” is headed to the playoffs after a long season of hard work, injuries, and almost sleepless nights. It’s so wonderful to be able to witness this amazing journey first hand. Seeing the effort my husband and his team put in on a daily basis and now watching it all pay off is simply unbelievable, but totally believable. If you know what I mean. All I can say is to God be all of the glory and the honor.

With that being said I will most likely be absent from the blog for the next 3 days, but will come back with hopefully great news and amazing photos and tidbits from our little adventure in Denver, Colorado. Before this hectic but exciting time we were able to spend a nice day together by the pool last week. We enjoyed salmon burgers and fries from Nations and soaked up some sun(lathered in The Honest Company sunscreen of course! See link below or on sidebar and try it!).
